Garlic Tilapia

Directions
Salt and pepper tilapia fillets and set aside.
Melt butter in a deep skillet and saute garlic on medium heat until tender. Add caper and lemon juice, white wine, and tilapia. Let tilapia simmer in the broth on each side for approximately 3 minutes a side, or until it starts to flake apart. May need to add more butter as the sauce reduces.
While tilapia is cooking bring 5 cups of salted water to a boil. Add spinach and let simmer for 30 seconds or until has wilted to half its original size. It will become a dark green color. Remove from heat and drain.
Place 1/4 of spinach onto a plate, top with a fillet of tilapia and pour 1/4 of the sauce over it. Serves 4

4 tilapia fillets
1/2 lb fresh spinach
3 tbls butter
3 cloves minced garlic
1 tbls of caper juice
1 tbls lemon juice
1 tbls dry white wine
salt and pepper to taste
