Blackened Chicken Stroganoff

  • 1 package boneless skinless chicken breasts sliced into 1 inch pieces.
  • 1 tbls. blackening seasoning
  • 2 tbls. olive oil
  • 1/2 C. sliced mushrooms
  • 1 medium onion chopped
  • 6-8 garlic cloves minced
  • 16 oz. sour cream
  • 1 tsp. salt
  • 1 tsp. restaurant pepper
  • 1 tbls. parsley


  • Coat the chicken evenly with blackening seasoning. Heat garlic over low-medium heat until tender. Remove half the garlic and set aside. Increase heat to med-high and add the chicken. Brown the chicken. Add the onion until it becomes tender. Reduce heat back to low-medium.  Add remaining ingredients and cook on low for about 15 minutes.
  • Serve over pasta or rice.
