Stuffed Grilled Chicken

  • 3 double breasted chicken breasts
  • 1 green bell pepper finely chopped
  • 2 red jalapeno pepper finely chopped
  • 4 cloves garlic minced
  • 1 med. onion finely chopped
  • 1 cup grated asiago parmasean, or romano
  • 1 C chopped spinach
  • 3 tbls olive oil
  • 1 cup Italian dressing
  • Chicken Seasoning
  • kosher salt
  • garlic salt
  • black pepper
  • parsley
  • thyme


  • Soak the chicken breasts in a mixture of Italian dressing and olive oil for about 30 min-1 hr. minimum(longer if desired). Combine the vegetables and the cheese in a mixing bowl.  Open the breasts and stuff the inside. Fold the other breast over and tie together with non-flammable cooking string. Generously dust the outside with the chicken seasoning.
