Southwestern Lettuce Wraps

  • 1 C. Black Beans
  • 1 C. Crisp kernel corn
  • 1 C. Chopped chicken previously cooked
  • 1 T. jalapeno diced
  • 2 T. white onion diced
  • 1/2 C. cilantro chopped.
  • 1/4 tsp. chili powder
  • 1/4 tsp. fajita seasoning
  • Whole leaf iceberg lettuce slightly chilled


  • Pre-cook the chicken however you like. I usually make this as an accompaniment to some other chicken dish, so I just leave some of the chicken from the other dish aside. Over medium heat, combine all ingredients minus the lettuce. Cook and stir slightly until the onion and jalapeno start to soften. Remove from heat and let cool for a couple minutes. Spoon mixture into leaf of lettuce and serve like a taco.
